Beautiful yellow strawy color with golden shades. On the nose, the wine is elegant with flavors of yellow fruits, peach, apricot, and exotic fruits. The palate is mellow and harmonious with notes of candied fruits. Well balanced, this wine has a great subtlety.
Ideal with a foie gras on his gingerbread, blue cheese, Tarte Tatin.
Served around 10 degrees.
Hand-picked with succesive selection, the grapes are botritized at 80%. It contains around 290 grammes of natural sugar by liter at the harvest. Very soft pneumatic pressing for 3 to 4 hours, then the alcoholic fermentation is done in stainless steel tank at a natural temperature of 19 to 22 ° C. Aging in vats on fine sediments to preserve the expression of Chenin.
This cuvee was created in 1995, the oldest vines date of the time 1921. After the bad year of 1994, we had the idea to pick the leaves of the vines and thin out with the hands; only the side of the vines where the sun goes up. This operation carry out in july have the purpose to seperate the grapes and favorise the aeration of the vine. The bet was won! The harvest happens in october, we select with our hands all the grapes affected at 80% of noble rots. This gives, after fermentation, a perfect wine’s balance. A very tasty wine, almost syrupy.
