The robe is yellow gold with a beautiful intensity. The nose is subtle and elegant and highly open with a magnificient complexity of overripe yellow fruits. Some vanilla exhalation increase the end. The taste is extremely mellowness, complex and rich with a long persistence. A generous dry white that will know how to seduce the most meticulous epicurians.
Ideal wine with scallop, grilled fish, sea fish in general and also some cheeses like the ‘Comté’.
Dry white wine, uncork 30 minutes in advance. Served around 10 degrees.
Selection of the best yellow-gold grapes at full maturity with an average natural degree of 13,5/14 % Vol. Very soft pneumatic pressing, after a ‘pelliculaire’ maceration for hours. Alcoolic and malolactic fermentations in oak barrels of 300 to 500 liters with ‘batonnage’. Maturing on a fine lees during 12 months in an oak barrels made in France without sulfites.
The new cuvees are often ensue from great vintage. We have created the ‘Clos des Sables’ in 1997, (the year of the century with 1947). We felt that a year like that would give us the opportunity to do even better with the dry white ripeness. And especially, to produce a rich and power- full wine. We have selected the best plot made up of rolled gravels put on the shales. After the harvest at maturity of the grapes, we proceed a delicate pressing of the most beautiful grapes. Then, that must (pressed fruit), come down by gravitation to the barrel (oak). Afterwards, it will ferment slowly during several months. ‘Clos des Sables’ is raise like a red wine in the greatest respect of our splendid cepage Chenin.
