The colour is crystalline, light, yellow with gold nuancy. The nose is subtle with a scents of white fruits, lemon balm, hazelnut, almond, vanilla and licorice. The taste is elegant, fresh, sometimes tonic with a very fine fizz.
For parties, wedding, birthdays... with a dessert or for a pre-dinner drink.
Served cold around 6 degrees.
Manual harvest, very soft pressing (150kg of grapes will give only 100 L of juices.) First fermentation in vat and then the matur- ing of 9 months. Second fermentation in bottle with the natural sugar of the grapes during 3 months, then an aging on lath during 15 months minimum. After the disgorgement who happens at the end of the maturing on lath, the ‘Crémants’ are conserved several months in the cellar before the selling.
