Hand-harvested at optimal ripeness, with no search for botrytised grapes. Gentle, meticulous pressing followed by precise cold settling in tank for 24 hours. Natural fermentation and ageing take place underground and partly in sandstone amphorae on fine lees for nine months. Blending and bottling occur before summer.
