The Cabernet Franc grapes are harvested at full ripeness in early October. In the cellar, the same philosophy as in the organically converting vineyard is applied, with the highest level of precision and care. Fermentation and maceration take place in temperature-controlled tanks at 28°C to gently extract maximum aromas over 15 to 20 days. The wine is then aged for 5 months in tanks and 12 months in amphorae before bottling in spring.
