PASCAL CAILLEAU

After completing his studies in viticulture and oenology, Pascal travelled through Burgundy and the American vineyards, broadening his perspective and discovering new winemaking techniques. Upon his return in 1984, he took over the family estate and implemented new prophylactic measures for vine cultivation. Passionate about winemaking, he combines modern technology with ancestral know-how, always with respect for the environment and a commitment to showcasing the terroir. His precision and discipline begin in the vineyard, and he works closely with every member of the team to continually enhance the quality of the wines.

QUENTIN CAILLEAU
Winemaker

Now it’s Quentin Cailleau’s turn — the new generation who joined Domaine Sauveroy in 2018 after studying viticulture and oenology at the ESA University in Angers. A naturally curious spirit, Quentin first explored the American continent before discovering diverse farming and winemaking techniques in Portugal, Spain, Hungary, the Rhône Valley, and of course, Anjou.

Through his travels, Quentin brings a fresh dynamic to the estate, writing a new chapter in its remarkable story: the transition to organic farming, the installation of bird nesting boxes in the vineyard, an agroforestry project with the creation of wild zones to promote biodiversity, the introduction of amphora-aged cuvées, and the modernisation of the cellar. The decade ahead promises to be truly inspiring!

VERONIQUE CAILLEAU
Administration & Customer Relations

At the heart of the Domaine since 1987, Véronique ensures that every client receives the highest level of service. Her exceptional organisational skills allow her to manage the administration, accounting, staff coordination, and order logistics with precision and care. Perfectly familiar with all the estate’s wines, she also enjoys welcoming visitors to the tasting room to share her knowledge and passion. An artist at heart, Véronique brings her creative touch to the design of the estate’s newsletters and wine labels, adding personality and elegance to the Domaine Sauveroy identity.

QUENTIN & LOÏC
Guardians of the vineyard's biological balance

Together, they are responsible for managing the entire vine cycle — every precise gesture shaping the quality of the future harvest. Quentin and Loïc prune, tie, debud, remove shoots, trellis, thin leaves, and cluster-trim, ensuring that each bunch ripens under the best possible conditions. Their discernment and anticipation at every stage are essential to achieving an optimal harvest. From harvest to ageing, they bring their expertise and precision both in the vineyard and in the cellar during vinification. They also oversee the seasonal workforce to ensure the highest standards of work, and excel in the preparation, bottling, and labelling of the wines.
