Rivière Sauvage was born only in 2018 and has since become the hidden gem of Domaine Sauveroy — the one sought after by lovers of great Chenin wines that are powerful, vibrant, and full of nuance. A truly unique wine, owing nothing to chance. The subsoil of metamorphic rock gives the wine a superb mineral backbone, both refreshing and saline, while the schistous, sandstone-rich soil and semi-hillside exposure bring additional breadth and depth. The ultimate goal of ageing in amphorae remains unchanged: to achieve the perfect harmony between the wine’s natural density, its mineral tension, and the vital energy drawn from its environment at the peak of grape maturity.

The colour is a beautiful golden hue. The nose, refined and expressive, opens with white flowers before unfolding into fresh, juicy fruit, as if just picked and sliced — pear, apple, apricot, and passion fruit come to mind. Hints of citrus weave through this delightful aromatic picture. On the palate, while the white-fleshed fruits take the lead, subtle floral and lightly honeyed notes emerge. The mid-palate is particularly generous, shimmering with fine mineral and saline touches. The texture lingers beautifully, offering remarkable length on the finish.

Harvesting takes place at optimal ripeness, with no search for botrytised grapes. Alcoholic fermentation and ageing occur in 1,000-liter sandstone Ovo amphorae. Ageing on fine lees lasts between 10 and 14 months, depending on the amphora. Malolactic fermentation is not desired for this cuvée. The amphora brings precision, minerality, freshness, and purity while preserving the authenticity of both the terroir and the Chenin grape.
