Tradition is a sweet Coteaux du Layon, hand-harvested through successive selections. Yields of under 30 hl/ha are often required to achieve this level of quality. Extensive work is carried out in the vineyard beforehand to prepare the grapes for this remarkable concentration and the unique freshness that define the wines of Anjou.

The sun-drenched, sugar-rich grapes were hand-sorted. Only two early selections were needed this year to achieve the desired concentration. After a gentle three-hour pressing, the must fermented slowly in tanks to preserve a beautifully fresh balance.
