Commentaire de dégustation L’OEIL, LE NEZ, LA BOUCHECommentaire de dégustation : L’OEIL, LE NEZ, LA BOUCHE
The colour is a bright straw yellow with golden reflections. The nose is fine and elegant, revealing aromas of yellow fruits — peach, apricot, and exotic fruits. The palate is smooth and harmonious, with notes of candied fruit. Fresh and long on the finish, this wine is beautifully balanced and remarkably subtle.

Hand-harvested through successive selections, the grapes are about 80% affected by noble rot. At harvest, they contain around 290 g of natural sugar per litre. The pneumatic pressing is very gentle and lasts 3 to 4 hours. Alcoholic fermentation takes place in tanks at a natural temperature of 19 to 22°C. The wine is aged on fine lees in tanks to preserve the pure expression of Chenin.
Histoire LE DÉBUT D’ UNE AVENTUREHistoire : LE DÉBUT D’ UNE AVENTURE
This cuvée was born in 1995, with the oldest vines dating back to 1921. After the poor vintage of 1994, we decided to hand-thin and leaf-strip the “sunrise” side of the vines. This operation, carried out in July, aimed to prevent grape bunch overcrowding and promote better air circulation within the canopy.
